Spicy Chicken Sandwich with Garlic Parmesan Fries

Ingredients

1- 1 1/2 lb. chicken breast
2 eggs
1/2 cup flour
1 cup avocado oil (or other high heat cooking oil)
2 cups panko breadcrumbs
3 russet potatoes
3 garlic cloves, minced
1/4 cup parmesan, finely shredded
brioche buns
2/3 cup mayonnaise
3 Tbsp hot sauce (I used Cholula)
1 tsp lemon juice
kosher pickle slices
Iceberg lettuce, shredded (about 2 cups)
2 Tbsp parsley
1/2 tsp garlic powder
2 Tbsp butter
Salt and pepper to taste

Instructions

You could air fry both the sandwich and the fries, but I chose to shallow fry the sandwiches and air fry the French fries this time. If you are air frying the chicken, just add about 1/2 flour to the panko. It will help it fully coat the chicken. Air fry for about 15 minutes on 390 degrees, flipping halfway through.

First step is to wash your potatoes and cut into strips (or fries, if you will). Put those in a pot or bowl of water and let soak for an hour. Next, prepare the spicy sauce. Mix the mayo, hot sauce and lemon juice together in a bowl and keep refrigerated until ready to plate.

Prepare breading station. In shallow bowl add flour and season with garlic powder, salt and pepper. In another bowl, add eggs and 1 tablespoon of hot sauce. Mix well. In 3rd bowl add panko breadcrumbs and season with salt and pepper.

Place chicken on cutting board and cover with plastic wrap or put in a large Ziploc bag. Pound the chicken until it is even. Cut the chicken into 4 pieces and season both sides with salt and pepper. Dip the chicken in the flour, shaking off any excess. Then dip the chicken in the egg mixture and panko. Push the panko into the chicken to make sure all the crevices are covered. Repeat with the remaining chicken pieces. Set aside.

Heat cast iron or skillet over medium heat. Add enough oil to cover the pan completely. Add the chicken to the skillet a couple pieces at a time so it’s not overcrowded. Cook 2-3 minutes a side. Place the chicken on a plate and keep warm until the fries are ready.

Preheat air fryer to 390 degrees. Drain and dry off potatoes. Add to air fryer and cook for about 15 minutes, shaking the basket every 5 minutes or so. As the fries finish cooking, melt the butter in the microwave and add it to a large mixing bowl. Add shredded parmesan cheese, garlic and parsley to the bowl. Once fries are done, toss in the bowl and season with salt.
